Roasted Garbanzo Beans w/ Sea Salt & Goji Berries

 

I think we have soundly established that I rather enjoy having something to “munch” on throughout the day.


With this in mind, I found this recipe recently and was pleasantly surprised at how great these little “bite-sized delights” tasted!


So I thought I would pass them along as a healthy snack option!



This recipe is simple, straightforward, and doesn’t require any obscure ingredients that are hard to find…which I love.

 

 




Roasted Garbanzo Beans w/Goji Berries




 

 

 



1 can garbanzo beans                                      

1/2 c. dried goji berries

course sea salt to taste




::::A word about Goji Berries:

By now we have probably all heard of them, but until recently I had never tried them for myself.  I find them interesting and, because of that, have started doing a little reading up on them.  For whatever its worth, here is my two-minute version of “all things goji berries”:


Basically, Goji berries are native to China.  They have extremely high antioxidant properties, which is what has caused these berries to be “all the rave” recently in the natural health world.  Apparently the Chinese have known of their powerful properties for centuries and have used them both medicinally, and in things like herbal teas for as long as they can remember.


They also rank extremely high in the Vitamin A category, and are believed to have an anti-aging type of mystery about them.


Some have claimed that these berries may also help to combat—you guessed it—Diabetes, heart disease, and high blood pressure.


Is any of this true?  I have no idea!  However, I do like trying new things, and these have a sweet/tart-like taste to them that has grown on me.::::




This snack offers an alternative to traditional trail mix…and different is always a good thing, in my book!

 

 

Try them!

 


1 can of garbanzo beans (chickpeas)



 

 


Drain and then rinse them under water






Spread them out on top of a dry paper towel, in order to dry them out.  I also used a paper towel on top to really pat them dry.







Remove the paper towel, place beans back on cookie sheet and drizzle with Olive Oil.  I used my little Misto dispenser and it worked really well!






Season with salt, or any other spices you would like 


Bake at 425 for about 30-40 minutes


Remove from oven, and let cool


Add the Dried Goji Berries to the beans after they have cooled
